I've used LCD's on my old PowerTower Pro (9500 clone) and never had problems. You'll just need to get one with a regular VGA connector and get an Apple to VGA adapter or a PCI video card with VGA out.
Older video cards can be just as cheap as an adapter and will give you more video memory and higher resolutions. The old iXMicro Twin Turbo cards come in 4 or 8MB of VRAM and work pretty well. You can usually find them for about $5.00 on eBay, etc... You can find older Mac-compatible ATI video cards for about the same price too.
